PECAN NUT CUPS
  • Ingredients
  • Crust:
  • 1/2 cup unsalted butter
  • 8 ounces cream cheese, at room temperature
  • 1 cup flour
  • Filling:
  • 1 cup pecans
  • 3/4 cup golden brown sugar
  • 1 tablespoon melted butter
  • 1 egg, lightly beaten
  • Pinch salt
  • Sifted powdered sugar for garnish
Directions
  1. For crust, combine all ingredients in the food processor
  2. Pulse several times and then turn on until dough forms a ball
  3. Dough can be refrigerated at this point for several hours
  4. Divide dough into 24 balls
  5. Spray miniature muffin pan with nonstick spray and press dough into bottom and up sides to form crusts
  6. For filling, finely chop the pecans and place in a medium bowl
  7. Add the brown sugar, melted butter, egg and a pinch of salt
  8. Spoon 1 teaspoon filling into each crust
  9. Bake at 350 degrees for about 20 minutes or until crust is browned around the edges and filling is set
  10. Remove pastries to a rack to cool
  11. Dust with sifted powdered sugar to serve.
