Moroccan Almond Couscous
  • Ingredients
  • bag raw almonds
  • bunch scallions
  • bell pepper
  • black kalamata olive (small handful)
  • dried apricots (small handful)
  • cilantro (small handful)
  • 1 - 1 1/2 lemon juice
  • heart of romaine lettuce
Directions
  1. Soak the raw almonds in a bowl with spring water for at least 4 hours, or overnight
  2. Drain the water from the almonds and rinse them
  3. Add the almonds to a food processor and pulse until nicely chopped
  4. Add the almonds to a large bowl
  5. Chop the bunch of scallions, the bell pepper, the olives, apricots, and cilantro and add the large bowl with the almonds
  6. In a separate bowl juice 1 to 1 1/2 lemons, and add in olive oil, salt, freshly ground pepper, and cumin
  7. Whisk together and pour over couscous mixture
  8. Gently toss ingredients together
  9. Cut ends off heart of romaine to form little boats and fill with couscous
  10. Serve!
