Tomatillo Salsa
  • Ingredients
  • 6 medium fresh tomatillos
  • 3 medium tomatoes, diced
  • 1/2 cup minced red onion
  • 2 cloves garlic, minced
  • 2 to 3 jalapeno chilies, seeded and minced
  • 1 tablespoon minced fresh cilantro
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
Directions
  1. Remove the husks from the tomatillos and dice
  2. Place in a medium bowl with the tomatoes, red onion, garlic, chilies, cilantro, cumin and salt
  3. Toss to combine
  4. Use within 1 day. Yield: 2-1/2 cups SUGGESTED USE: Tomatillos actually are not related to tomatoes at all
  5. They have a slightly sour almost citrus taste that is very refreshing
  6. This salsa works especially well with fish dishes.
