Chili Peanut Noodle Salad
  • Ingredients
  • 1 red bell pepper
  • 12-14 basil leaves
  • bag of broccoli slaw (substitute w/sliced broccoli, carrot & red cabbage)
  • bean sprouts
  • green onions
  • multi grain spagetti
  • creamy peanut butter
  • soy sauce
  • olive oil
  • lime juice
  • minced garlic
  • minced ginger
  • agave nectar
  • thai chili sauce
  • ground peanuts
Directions
  1. Cook your noodles first so they are ready and cooled by the time you assemble the dish
  2. Begin by cutting off the top and bottom of the bell pepper and slicing it into thin strips
  3. Slice the basil leaves into ribbons and place both in a large bowl
  4. Add the bag of broccoli slaw
  5. If you prefer to prepare all ingredients freshly, you can substitute with sliced broccoli, carrots and red cabbage
  6. Add in noodles
  7. In a separate bowl mix together the creamy peanut butter, soy sauce, olive oil, lime juice, with the minced garlic and ginger
  8. Finish the sauce with agave nectar and Thai chili sauce
  9. Mix well
  10. Pour over vegetable and noodle mixture and toss well
  11. Garnish with ground peanuts.
