Avocado Salsa
Avocado Salsa
Ingredients
2 medium ripe avocados, diced
1 /2 cup diced fresh tomato
3 tablespoons diced red onion
3 tablespoons chopped fresh cilantro leaves
1 clove garlic, minced
1 tablespoon fresh lime juice
1 serrano chili minced
1/2 teaspoon salt
Directions
Gently rinse the diced avocado with water to slow the discoloration
Toss the avocado with the tomato, red onion, cilantro, garlic, lime juice, chili and salt
Use within 8 hours. Yield: 2-1/2 cups SUGGESTED USE: Rinsing the avocado retards the color change allowing this salsa to retain its bright look
This is delicious served with Pollo Asado (page 51) marinated chicken.
