Spicy Raspberry Salsa
  • Ingredients
  • 2 cups fresh raspberries
  • 2 jalapeno chilies, seeded and minced
  • 2 tablespoons minced red onion
  • 2 tablespoons minced fresh cilantro
  • 2 tablespoon raspberry vinegar
  • 1/4 teaspoon salt
Directions
  1. Place raspberries, chilies, red onion, cilantro, raspberry vinegar and salt in a medium bowl
  2. Toss lightly to combine flavors
  3. Chill 1 hour or up to 2 days. Yield: 2 cups SUGGESTED USE: This salsa has a bit of a zing
  4. Spoon it over fish, chicken or even vegetables
  5. For fun try it on chicken breasts marinated with the Rosemary Balsamic Marinade (page 45)
  6. If fresh raspberries are not available you may use frozen unsweetened berries, but be sure to drain them really well. 208
