Pineapple Kiwi Salsa
  • Ingredients
  • 1/2 medium pineapple, peeled,
  • cored and diced
  • 4 kiwis, peeled and diced
  • 1 fresh red or green jalapeno,
  • seeded and minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon vegetable oil
  • 1 tablespoon minced fresh cilantro leaves
Directions
  1. Place pineapple, kiwi, chili, lemon juice and vegetable oil in a medium bowl
  2. Toss to combine
  3. Toss in cilantro
  4. Let stand for 1 hour or refrigerate up to 2 days. Yield: 2-1/2 cups SUGGESTED USE: Try this special salsa on fish, especially salmon or mahi mahi
  5. It is not only pretty, it's tasty too.
