Black Bean Salsa
  • Ingredients
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 large orange
  • 1/3 cup sliced green onions
  • 1/4 cup fresh lime juice
  • 2 tablespoons vegetable oil
  • 1 /2 teaspoon salt
Directions
  1. Place black beans in a medium bowl
  2. Peel orange and cut into 1/2-inch pieces
  3. Add orange to beans along with green onions, lime juice and oil
  4. Toss gently to combine
  5. Season with salt. Yield: 2 cups SUGGESTED USE: This sweet and sour bean salsa is perfect served with a steak coated with the Spicy Texas Rub (page 127) or the BBQ Rub (page 128).
