Mango Cranberry Relish
  • Ingredients
  • 1 pound ripe mangoes (about 2)
  • 2 cups fresh (not frozen) cranberries
  • 1 /2 medium unpeeled orange, cubed
  • 1/2 cup sugar
Directions
  1. Peel mangoes and cut into cubes
  2. Place mango, cranberries and orange in the food processor
  3. Pulse to coarsely chop
  4. Add sugar and pulse to combine
  5. Do not puree
  6. Let relish stand 30 minutes before serving or refrigerate up to 3 days. Yield: 2-1/2 cups SUGGESTED USE: Perfect with roast turkey, this is also tasty with any orange juice marinated chicken breasts
  7. It is also tasty with a turkey breast coated with the Tropical Sweet Spice Rub (page 131).
