Honey Spiced Apricot Condiment
  • Ingredients
  • 1 (28-ounce) can apricot halves in syrup
  • 2 tablespoons butter
  • 1/4 cup sugar
  • 1/4 cup honey
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 /4 teaspoon ground cloves
Directions
  1. Drain apricots, reserving 1/4 cup syrup
  2. Cut apricots into 1/2-inch dice
  3. Place butter, sugar, honey, apricot syrup, cinnamon, nutmeg and cloves in a medium sauce pan
  4. Bring to a simmer, stirring until butter is melted and sugar dissolves
  5. Continue to simmer for 2 minutes
  6. Stir in apricots and heat through, another 2 to 3 minutes. Yield: 2 cups SUGGESTED USE: This spiced apricot chutney is delicious served with pork loin coated with the Brown Sugar Cumin Rub (page 138) or any marinade that is slightly spicy.
