Papaya Chutney
  • Ingredients
  • 1-1/2 pounds papaya, peeled, seeded and chopped
  • 1 large apple, peeled and chopped
  • 1 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/4 cup dark raisins
  • 1/4 cup golden raisins
  • 3/4 cup sugar
  • 1/2 cup cider vinegar
  • 1/2 teaspoon salt
  • 3/4 teaspoon mustard seeds
  • 1 /4 teaspoon crushed red pepper flakes
  • 2 tablespoons crystallized ginger
Directions
  1. Place papaya, apple, onion, bell pepper, raisins, sugar, vinegar, salt, mustard seeds and ginger in a 3-quart saucepan and bring to a boil over medium heat
  2. Continue to cook, uncovered for 30 to 40 minutes, stirring occasionally, until fruit is tender and mixture has thickened. Yield: 2 cups SUGGESTED USE: Chutney is a jam-like sauce that not only contains fruit and sugar, but also onions and other vegetables as well as vinegar
  3. This sweet and sour sauce is great as a low fat topping for just about any meat
  4. It is also good spooned over cream cheese as an appetizer served with crackers.
