Fresh Peach and Dried Cherry Chutney
  • Ingredients
  • 3 peaches, peeled and diced
  • 1 cup dried cherries
  • 1/2 cup chopped onion
  • 1/4 cup pure maple syrup
  • 2 tablespoons honey
  • 1 cup red wine or raspberry vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon white pepper
  • 1/4 cup fresh mint leaves
Directions
  1. Place peaches, cherries, onion, maple syrup, honey, vinegar, salt and pepper in a 3 quart saucepan and bring to a boil over medium heat
  2. Lower heat and simmer for 15 minutes
  3. Add the mint and continue to cook for 5 to 10 minutes or until the mixture has thickened slightly
  4. Cool to room temperature and store in the refrigerator up to 2 weeks. Yield: 2-1/2 cups SUGGESTED USE: This intense fruit flavored chutney is at its best with shrimp or pork
  5. If you can't find the dried cherries, try it with dried cranberries, often know as craisins.
