Spiced Apple Chutney
  • Ingredients
  • 3 cups (3 to 4) Granny Smith apples, peeled and chopped
  • 1/2 cup chopped onions
  • 1/2 cup chopped red bell pepper
  • 1 /4 teaspoon crushed red pepper flakes
  • 1/2 cup golden raisins
  • 1/2 cup dark raisins
  • 2 teaspoons yellow mustard seeds
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground allspice or cinnamon
  • 1 /2 teaspoon salt
  • 1 cup cider vinegar
  • 1 cup brown sugar
Directions
  1. Place apples, onion, red pepper, pepper flakes, raisins, mustard seeds, spices, salt, vinegar and sugar in a 3-quart saucepan and bring to a boil over medium heat
  2. Lower heat and simmer for 45 to 60 minutes or until the apples are tender and the mixture has a jam-like consistency
  3. Cool to room temperature
  4. Store in the refrigerator for up to 2 weeks. Yield: 2-1/2 cups SUGGESTED USE: Serve this beside a spice-crusted roasted pork loin or tenderloin for a change from the traditional applesauce.
