3 cups (3 to 4) Granny Smith apples, peeled and chopped
1/2 cup chopped onions
1/2 cup chopped red bell pepper
1 /4 teaspoon crushed red pepper flakes
1/2 cup golden raisins
1/2 cup dark raisins
2 teaspoons yellow mustard seeds
1 teaspoon ground ginger
1/2 teaspoon ground allspice or cinnamon
1 /2 teaspoon salt
1 cup cider vinegar
1 cup brown sugar
Directions
Place apples, onion, red pepper, pepper flakes, raisins,
mustard seeds, spices, salt, vinegar and sugar in a 3-quart
saucepan and bring to a boil over medium heat
Lower
heat and simmer for 45 to 60 minutes or until the apples
are tender and the mixture has a jam-like consistency
Cool to room temperature
Store in the refrigerator for up
to 2 weeks.
Yield: 2-1/2 cups
SUGGESTED USE: Serve this beside a spice-crusted roasted
pork loin or tenderloin for a change from the traditional
applesauce.
