Spicy Mango Chutney
Spicy Mango Chutney
Ingredients
3 cups diced fresh or frozen mango
1 apple, peeled and diced
3/4 cup diced onion
1/2 cup diced red bell pepper
1 fresh red jalapeno chili, seeded and minced
1 clove garlic, minced
1 cup brown sugar
1 cup white wine vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
Pinch cayenne pepper
2 tablespoons minced crystallized ginger
Directions
Place mango, apple, onion, red pepper, red chili, garlic, brown sugar, vinegar, salt and pepper in a 3-quart saucepan
Bring to a boil over medium heat
Lower heat and simmer for 35 to 40 minutes or until fruit is tender and mixture has thickened slightly
Stir in cayenne and crystallized ginger
Let cool to room temperature
Refrigerate up to 2 weeks. Yield: 2-1/2 cups SUGGESTED USE: Mango chutney is the most well-known of all chutneys
Often referred to as Major Grey's Chutney, it was first created in India by the British to complement and cool the scorching Indian Curry dishes
Use this chutney to garnish any roasted meat.
