Mint and Garlic Marinade
  • Ingredients
  • 2/3 cup chopped fresh mint
  • 2 cloves garlic, minced
  • 1 /2 cup fresh lemon juice
  • 1/2 cup olive oil
  • 1/2 teaspoon salt
  • 1 /4 teaspoon freshly ground pepper
Directions
  1. Place mint, garlic, and lemon juice in a food processor and pulse to finely chop
  2. With the machine running add the olive oil in a thin stream
  3. Add the salt and pepper and let stand 1 hour before using as a marinade. Yield: 1 cup SUGGESTED USE: This marinade is made for lamb
  4. Use it on a leg of lamb (8 hours), with or without the bone, lamb chops (2 to 3 hours) or lamb kabobs (2 to 4 hours).
