Use the oriental noodle die to extrude pasta dough
or the manicotti die to make sheets for won ton
skins, egg rolls, or dim sum (dumplings or pot-
stickers) using the directions for filled pasta shapes
in the Making Pasta chapter
If making by hand,
mix flour, eggs, and water and knead the dough
for 10 minutes
Form into a smooth ball and rub
the sesame oil over the surface
Let it rest for
about an hour
Roll the dough into 1/16 to 1/8
inch thick sheets on a floured board and cut into
1/16 to 1/8 inch-wide noodles about 8 to 10 inch-
es long.
Try adding about 3 tablespoons of sesame paste,
chopped fresh coriander, crushed ginger, or chili
pepper pulp to the eggs and reduce the amount of
water slightly.
