SPINACH-GORGONZOLA SAUCE
SPINACH-GORGONZOLA SAUCE
Ingredients
4 tablespoons butter
8 ounces Gorgonzola cheese, crumbled
2 (10 ounce) packages frozen chopped spinach
1/2 cup white wine
2 large cloves garlic, finely minced
freshly ground black pepper to taste
1 to 1-1/2 cups heavy cream Parmesan cheese
Directions
Thaw spinach, squeeze dry, and puree
In a large saucepan, melt butter and Gorgonzola over low heat
Stir to blend, add spinach and wine
Simmer 5 to 6 minutes
Add garlic and pepper
Slowly stir in cream to form a soft, but not runny, sauce
Simmer 4 to 5 minutes
Pour sauce over pasta and serve with freshly grated Parmesan cheese.
