SPINACH-GORGONZOLA SAUCE
  • Ingredients
  • 4 tablespoons butter
  • 8 ounces Gorgonzola cheese, crumbled
  • 2 (10 ounce) packages frozen chopped spinach
  • 1/2 cup white wine
  • 2 large cloves garlic, finely minced
  • freshly ground black pepper to taste
  • 1 to 1-1/2 cups heavy cream Parmesan cheese
Directions
  1. Thaw spinach, squeeze dry, and puree
  2. In a large saucepan, melt butter and Gorgonzola over low heat
  3. Stir to blend, add spinach and wine
  4. Simmer 5 to 6 minutes
  5. Add garlic and pepper
  6. Slowly stir in cream to form a soft, but not runny, sauce
  7. Simmer 4 to 5 minutes
  8. Pour sauce over pasta and serve with freshly grated Parmesan cheese.
