YOGURT HERB SAUCE
  • Ingredients
  • 1/2 ounce butter or margarine
  • 1 small onion, chopped
  • 1 clove garlic, crushed
  • 2 tablespoons flour
  • 1/2 cup vegetable stock
  • 1-3/4 cups natural yogurt
  • 2 tablespoons fresh parsley,finely chopped
  • 2 tablespoons fresh basil,finely chopped
  • 2 tablespoons snipped fresh chives freshly ground black pepper
Directions
  1. Melt butter in a saucepan and cook onion and garlic over a medium heat for 2-3 minutes
  2. Stir in flour and vegetable stock and cook, stirring constantly, for 4 to 5 minutes longer or until sauce boils and thickens
  3. Remove from heat, stir in yogurt and simmer over a low heat for 2 to 3 minutes longer
  4. Mix in parsley, basil and chives and season to taste with black pepper
  5. Spoon over pasta and serve immediately
  6. For an interesting visual effect try using a 1/2 load each of red and green pasta dough made into spiral pasta.
