PUMPKIN CREAM SAUCE
  • Ingredients
  • 1 pound pumpkin cut into strips or
  • 1(16 oz.) can unflavoredpumpkin
  • 2-3/4 cups cream
  • 1/2 teaspoon ground nutmeg freshly ground black pepper
  • 1-1/2 teaspoons snipped fresh chives
Directions
  1. Boil, steam, or microwave pumpkin until tender
  2. Drain and rinse under cold running water and set aside
  3. In a sauce pan, bring cream to a boil, then simmer about 10 minutes until reduced by half
  4. Gently mash together pumpkin, nutmeg and pepper to taste and cook for 2 to 3 minutes longer
  5. Add pumpkin mixture to cream, stir in chives and cook for another 2 to 3 minutes
  6. Spoon sauce over your favorite cooked pasta and serve.
