ASPARAGUS SPAGHETTI
  • Ingredients
  • 1 full load pasta dough made into spaghetti
  • 2 tablespoons grated Parmesan cheese
  • 1 pound fresh asparagus spears, trimmed
  • 1 tablespoon olive oil
  • 1 thick slice whole grain bread, crumbed
  • 1 cup evaporated skim milk
  • 2 ounces grated mozzarella cheese freshly ground black pepper
Directions
  1. Make and cook spaghetti in boiling water in a large saucepan
  2. Drain, set aside and keep warm
  3. For sauce, steam, boil or microwave asparagus until tender
  4. Drain and refresh under cold running water
  5. Cut asparagus into one-inch pieces and set aside
  6. Heat oil in a frying pan and saute bread crumbs over a low heat, stirring constantly, for 2 minutes
  7. Add milk and asparagus, and cook, stirring occasionally, over a medium heat for 5 minutes
  8. Mix in mozzarella and season to taste with black pepper
  9. Put spaghetti on a warmed serving platter, spoon sauce on and toss gently to combine
  10. Sprinkle with Parmesan cheese and serve immediately.
