LOBSTER PASTA NETS
  • Ingredients
  • 1 full load pasta dough made into angel hair
  • 3 uncooked lobster tails or 9 large prawns
  • flour
  • vegetable oil for deep frying
Directions
  1. Make and cook pasta al dente in boiling water in a large saucepan
  2. Drain, rinse under cold running water, drain again and pat dry on absorbent paper towel
  3. Set aside
  4. Shell and thoroughly wash lobster or shrimp then cut into 1-1/2 inch pieces
  5. Dust lobster pieces with flour
  6. Wrap a few strands of pasta around each lobster piece
  7. Continue wrapping with pasta to form a net effect around lobster
  8. Heat oil in a large saucepan until a cube of bread dropped in browns in 50 seconds
  9. Cook pasta wrapped lobster in batches for 2-3 minutes or until golden
  10. Drain on absorbent kitchen paper and serve immediately with Lime Cream.
