DISHES MINI MANICOTTI QUICHES
  • Ingredients
  • 1 full load pasta dough made into Manicotti
  • 1/2 pound lean pork sausage or
  • 1/2 pound sliced bacon
  • 1/2 cup minced onion
  • 4 eggs
  • 1-1/2 cups half and half or undiluted evaporated milk
  • 1-1/2 cups shredded Swiss cheese
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon ground nutmeg
  • paprika
Directions
  1. Preheat oven to 350?F
  2. Butter 14 (2-1/2-inch) muffin cups
  3. Make manicotti according to directions in the Making Pasta chapter
  4. Line each muffin cup with one manicotti forming a ruffled edge
  5. Set aside
  6. In a large skillet, fry sausage over medium heat until cooked, stirring to break up sausage
  7. Cool; crumble and sprinkle evenly in bottom of each Manicotti shell
  8. Remove all fat from skillet except 1 tablespoon
  9. Add onion to skillet
  10. Saute over medium heat until golden
  11. Add beaten eggs, half and half, cheese, flour, salt, pepper and nutmeg
  12. Spoon mixture evenly over sausage into Manicotti shells using about 2 heaping tablespoons in each shell
  13. Sprinkle with paprika
  14. Bake for 15 to 20 minutes
  15. Let stand 15 minutes before serving
  16. Serve warm or cold. VEGETARIAN VARIATION: Substitute 1 cup cooked, chopped asparagus or broccoli for the pork
