MINI MEATBALL SOUP
  • Ingredients
  • 1 half load pasta dough made into linguini, cut into 3/4-inch pieces
  • 1/2 pound ground sirloin
  • 1/4 cup dry breadcrumbs
  • 1 egg, slightly beaten
  • 2 tablespoons minced fresh parsley
  • 1 tablespoon grated onion
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup water
  • 2 (10-1/2-ounce) cans beef broth
  • 1 beef bouillon cube
  • 1/2 cup tomato paste
  • 1 tablespoon butter
Directions
  1. In a medium bowl, mix ground sirloin, breadcrumbs, egg, parsley, onion, salt and pepper
  2. Form into about 16 meatballs by hand or by using the meatball die for your Popeil Automatic Pasta Machine
  3. In a large saucepan, mix water, beef broth, bouillon cube, tomato paste and butter
  4. Bring to a boil
  5. Using a spoon, carefully lower meatballs one at a time into the broth
  6. Cover and cook 25 minutes
  7. Add linguini pieces and cook until pasta is al dente
  8. Serve immediately.
