PASTA E FAGIOLI
  • Ingredients
  • 1 full load of pasta dough made into macaroni
  • 1 cup olive or vegetable oil
  • 6 garlic cloves, coarsely chopped
  • 2 (14 -1/2 ounce) cans diced tomatoes
  • 1-1/2 tablespoons dried oregano
  • 1-1/2 to 2 teaspoons pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 2 (15 ounce) cans kidney beans
  • 3/4 cup chopped fresh parsley
  • 1/2 cup grated Parmesan cheese
Directions
  1. In a large saucepan, heat oil over medium-high heat; add the garlic and saute until golden
  2. Allow to cool slightly to prevent splattering, then add the tomatoes, oregano, pepper, salt, and garlic powder
  3. Reduce the heat to medium and cook for 10 minutes, stirring frequently
  4. Add the kidney beans and parsley and continue cooking for 10 minutes more, stirring frequently
  5. Meanwhile, cook macaroni al dente; drain and add to the bean mixture
  6. Add Parmesan cheese, mix thoroughly, and serve.
