ONION VERMICELLI SOUP
  • Ingredients
  • 1 half load of pasta dough made into vermicelli
  • 1/2 cup butter or margarine
  • 4 onions, thinly sliced
  • 2 tablespoons flour
  • 2-1/2 cups hot chicken broth
  • 2 quarts of milk
  • freshly ground black pepper
Directions
  1. In a large pot, saute onions in butter until soft
  2. Gradually stir in flour then slowly add hot chicken broth
  3. Cook, stirring constantly, until soup is smooth and thickened
  4. Stir in milk and bring to boil
  5. Add vermicelli and season to taste with black pepper
  6. Continue to cook until pasta is al dente.
