SPAGHETTI BEEF SOUP
  • Ingredients
  • 1 half load pasta dough made into spaghetti, and cut short (3 inches)
  • 1 pound ground sirloin
  • 1 (16 ounce) package frozen mixed vegetables
  • 4 cups vegetable juice cocktail or tomato juice
  • 4 cups water
  • 2 tablespoons instant beef bouillon
  • 1 teaspoon dried basil leaves
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon salt
  • 1/2 teaspoon onion salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 2 tablespoons Worcestershire sauce
  • grated Parmesan cheese (optional)
Directions
  1. Make spaghetti and set aside
  2. In a soup pot or Dutch oven, brown the ground sirloin over medium-high heat
  3. Stir in the mixed vegetables, vegetable juice cocktail, water, beef bouillon, basil, thyme, salt, onion salt, pepper, garlic powder, and Worcestershire sauce
  4. Bring to a boil, reduce heat and simmer for 30 minutes
  5. Meanwhile, cook the spaghetti until al dente and drain
  6. Add the spaghetti to the soup mixture and simmer until pasta is thoroughly heated
  7. Serve with Parmesan cheese.
