FRESH FRUIT SHELL SALAD
FRESH FRUIT SHELL SALAD
Ingredients
1 half load of pasta dough made into shells
1 (8 ounce) container plain low-fat or nonfat yogurt
1/4 cup frozen concentrate orange juice, thawed
1 (20 ounce) can pineapple chunks in juice
1 large orange, peeled, sectioned, and seeded
1 cup seedless red grapes, cut into halves
1 cup seedless green grapes, cut into halves
1 apple, cored and chopped
1 banana, sliced
Directions
Make pasta and cook until al dente
Drain and rinse thoroughly to cool
Place in a bowl and set aside
To make dressing, mix the yogurt and orange juice concentrate in a small bowl
Drain juice from pineapple
In a large bowl, combine the fruit
Add the yogurt mixture and pasta; toss to coat
Cover and chill thoroughly
Toss gently before serving
This salad can be served for lunch, snack or a dessert
You can make ahead and refrigerate until ready to serve
Be sure to refrigerate leftovers.
