FRESH FRUIT SHELL SALAD
  • Ingredients
  • 1 half load of pasta dough made into shells
  • 1 (8 ounce) container plain low-fat or nonfat yogurt
  • 1/4 cup frozen concentrate orange juice, thawed
  • 1 (20 ounce) can pineapple chunks in juice
  • 1 large orange, peeled, sectioned, and seeded
  • 1 cup seedless red grapes, cut into halves
  • 1 cup seedless green grapes, cut into halves
  • 1 apple, cored and chopped
  • 1 banana, sliced
Directions
  1. Make pasta and cook until al dente
  2. Drain and rinse thoroughly to cool
  3. Place in a bowl and set aside
  4. To make dressing, mix the yogurt and orange juice concentrate in a small bowl
  5. Drain juice from pineapple
  6. In a large bowl, combine the fruit
  7. Add the yogurt mixture and pasta; toss to coat
  8. Cover and chill thoroughly
  9. Toss gently before serving
  10. This salad can be served for lunch, snack or a dessert
  11. You can make ahead and refrigerate until ready to serve
  12. Be sure to refrigerate leftovers.
