SUMMER PASTA SALAD
  • Ingredients
  • 1 full load of pasta dough made into macaroni
  • cut into 1/2-inch pieces
  • 1 (16 ounce) package frozen mixed vegetables,
  • thawed and drained
  • 1/4 cup finely chopped onion
  • 2/3 cup mayonnaise
  • 2 tablespoons lemon juice
  • 2 teaspoons sugar
  • 1 teaspoon dried dill weed
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup cooked chicken or beef, diced (optional)
  • 3/4 cup diced cheddar or jack cheese
Directions
  1. Make pasta and cook until al dente
  2. Drain and rinse thoroughly to cool
  3. Place in a large mixing bowl
  4. Add mixed vegetables, and onion; mix well
  5. In a small bowl, combine the mayonnaise, lemon juice, sugar, dill weed, salt, and pepper; blend well
  6. Pour the mayonnaise mixture over the pasta- vegetable mixture and toss lightly
  7. Add optional ingredients if desired
  8. Chill thoroughly
  9. Serve over lettuce and garnish with paprika
  10. If you're not serving the salad immediately, add an additional 1/4 cup mayonnaise to moisten just before serving.
