TUNA MACARONI SALAD
  • Ingredients
  • 1 full load of pasta dough made into macaroni
  • 2 large stalks celery
  • 1 large carrot, trimmed and peeled
  • 1/2 onion
  • 1 cup fresh parsley, chopped
  • 1 (7 ounce) can water-packed tuna, drained
  • 3/4 cup mayonnaise
  • 1 tablespoon extra-virgin olive oil
  • juice of 2 lemons
  • 2 tablespoons pickle relish (optional)
  • salt and freshly ground black pepper to taste
Directions
  1. Make pasta and cook until al dente
  2. Drain and rinse thoroughly to cool
  3. Place in a large mixing bowl and set aside
  4. Using food processor fitted with steel blade, finely chop vegetables and parsley separately, using pulsing action
  5. Or chop by hand
  6. As each vegetable is chopped, add to pasta
  7. Add tuna
  8. In the food processor or blender, combine mayonnaise, oil and lemon juice
  9. Process until well mixed
  10. Stir in pickle relish, if desired
  11. Pour mayonnaise mixture over pasta
  12. Mix well
  13. Season generously with pepper and a little salt, if needed
  14. Salad is best served immediately but can be refrigerated for several hours before serving.
