CHEESE AND RED PEPPER FETTUCCINE
  • Ingredients
  • 1 full load of pasta dough made into fettuccine noodles
  • 2 tablespoons oil
  • 2 cloves garlic, crushed
  • 2 red peppers, cut into strips
  • 8 green onions, cut into thin strips
  • 1 teaspoon cracked black pepper
  • 4 ounces feta cheese, crumbled
Directions
  1. Make fettuccine and cook until al dente
  2. Drain, set aside and keep warm
  3. Heat oil in a large frying pan and cook garlic and red peppers for 2 minutes
  4. Add green onions and black pepper and cook for 1 minute longer
  5. Add fettuccine and cheese to red pepper mixture and toss to combine
  6. Serve immediately
  7. When buying feta cheese, the color of the cheese under the rind should be chalk-white
  8. The cheese should be fresh and tangy, with no smell of ammonia.
