MACARONI ITALIANO
  • Ingredients
  • 1 full load of pasta dough made into macaroni
  • 1/2 cup olive oil
  • 1 yellow onion, chopped
  • 1/2 cup chopped hearts of celery
  • 3 bell peppers cut into 1 inch squares
  • 2 zucchini, peeled and diced
  • 1 medium eggplant, peeled and diced
  • 1 teaspoon dried oregano
  • 1/3 cup capers
  • 1/2 cup ripe olives, sliced
  • 4 cups marinara sauce (see recipe page 46)
  • 1/2 cup red wine
  • 1 tablespoon dried basil
  • salt and freshly milled black pepper to taste
Directions
  1. Make macaroni and set aside
  2. In a large skillet heat the oil; add the onion, celery, and peppers
  3. Saute until the peppers begin to brown
  4. Add the zucchini, eggplant, salt, pepper, and oregano
  5. Mix well and let simmer until tender
  6. Add the capers, olives and marinara sauce
  7. Mix well, cover and let simmer
  8. Add the wine and basil, cover and let simmer for 3 more minutes
  9. Cook macaroni until al dente and drain
  10. Add to sauce and serve.
