MACARONI AND NAVY BEANS
  • Ingredients
  • 1 full load of pasta dough made into macaroni
  • 1-1/2 cups dried navy beans
  • 2 cloves minced garlic
  • 1 onion, chopped
  • 1/4 cup oil or 6 strips bacon, cut up
  • Salt and pepper to taste
  • 2 (14 -1/2 ounce) cans diced tomatoes
Directions
  1. Make macaroni and set aside
  2. Cook beans slowly in 3 quarts of water until tender
  3. Add more water as needed; set aside
  4. Using oil or bacon, saute onion and garlic until light brown
  5. Add tomatoes and simmer for 10 minutes
  6. Add to cooked beans
  7. Meanwhile cook macaroni until al dente, drain thoroughly and add to bean and water mixture
  8. Salt and pepper to taste
  9. Serve immediately.
