PENNE WITH CHICK PEAS AND TOMATOES
  • Ingredients
  • 1 full load of pasta dough made into penne
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 3 (14 -1/2 ounce) cans diced tomatoes with juice
  • 1/4 teaspoon black pepper
  • 2 tablespoons parsley, minced
  • 1/2 teaspoon dried basil, crumbled
  • 1/2 teaspoon oregano, crumbled
  • 1-1/2 cups cooked and drained chick peas
Directions
  1. Make penne and set aside
  2. Heat the olive oil in a medium-size heavy saucepan over moderate heat for 30 seconds
  3. Add the garlic and cook, stirring, for 30 seconds
  4. Mix in the tomatoes, parsley, basil, oregano, and pepper; bring to a boil, lower the heat so that the mixture bubbles gently, then simmer, uncovered, for 10 minutes or until slightly thickened
  5. Stir in the chick peas and simmer, uncovered, 10 minutes longer
  6. Meanwhile, cook the penne until al dente, drain well and transfer to a heated serving bowl
  7. Pour the chick pea mixture over all and toss well
  8. Serve immediately.
