TORTELLINI IN BROTH
  • Ingredients
  • 1 full load of pasta dough made into cheese,
  • spinach or meat tortellini ( see recipe in stuffed and specialty chapter)
  • 2 quarts reduced-sodium chicken broth
  • 2 tablespoons grated Parmesan cheese
  • 3 cups spinach, arugula or watercress leaves
Directions
  1. Make tortellini according to instructions for making stuffed pasta in the Making Pasta chapter
  2. Cook tortellini until al dente and drain thoroughly
  3. Meanwhile, heat the chicken broth in a medium saucepan
  4. Add greens and cook until tender
  5. Add drained tortellini to the broth
  6. Bring to a gentle boil
  7. Ladle into soup bowls and sprinkle grated Parmesan cheese over each serving.
