SPAGHETTI WITH MEAT AND TOMATO SAUCE
SPAGHETTI WITH MEAT AND TOMATO SAUCE
Ingredients
1 full load of pasta dough made into spaghetti
1 tablespoon olive oil
1 medium-size yellow onion, chopped fine
1 medium-size carrot, peeled and chopped fine
1 small stalk celery, chopped fine
2 cloves garlic, minced
1/2 pound very lean ground sirloin
3 (16 ounce) cans low-sodium tomatoes,chopped, with their juice
2 tablespoons minced fresh basil or
1 teaspoon dried basil, crumbled
1/4 teaspoon black pepper
Directions
Make spaghetti and set aside
In a large saucepan, heat olive oil for 1 minute over moderate heat
Add onion, carrot, celery, and garlic, and cook, stirring frequently, until the onion is soft, about minutes
Add ground sirloin and cook, stirring, until browned, about 3 to 5 minutes
Add tomatoes, basil, and pepper, reduce heat to low, and simmer, uncovered, stirring occasionally, for 1 hour or until thickened
When sauce has only about 10 minutes longer to simmer, cook the spaghetti, drain well and place in a large heated serving bowl
Add the sauce and toss well
Serve immediately.
