PENNE WITH ARUGULA AND RED ONION
  • Ingredients
  • 1 full load of pasta dough made into penne
  • 2 small bunches of arugula
  • 2 tablespoons extra virgin olive oil
  • 2/3 cup thinly sliced red onion
  • 1 garlic clove, crushed
  • 2 tablespoons grated Parmesan cheese
Directions
  1. Make penne and set aside
  2. Trim any roots and thick stems from the arugula
  3. Wash the arugula in several changes of cold water and drain well
  4. There should be about 3 cups packed
  5. Heat the olive oil in a large skillet
  6. Add the red onion and cook, stirring, until tender, about 5 minutes; do not brown
  7. Add the garlic and cook 1 minute
  8. Stir in the arugula leaves and cook, stirring, until wilted and coated with the oil, about 2 minutes
  9. Meanwhile, cook penne until al dente and drain reserving about 1/2 cup of the pasta cooking liquid in a large serving bowl
  10. Add drained pasta to the serving bowl
  11. Add the arugula mixture and toss
  12. Sprinkle with the Parmesan cheese and serve.
