Pollo Asado (Mexican Chicken Marinade)
Ingredients
3/4 cup apple juice
3 tablespoons fresh lime juice
2 tablespoons vegetable oil
3 cloves garlic, minced
1 serrano or jalapeno chili, minced
1 /2 teaspoon paprika
1/2 teaspoon dried oregano
1 /2 teaspoon salt
1 /2 teaspoon freshly ground pepper
Directions
Place apple juice, lime juice, oil, garlic, chili, paprika, oregano, salt and pepper in medium bowl
Whisk to combine well. Yield: 1 1/4 cups SUGGESTED USE: Use this marinade on boneless chicken (1 to 4 hours)
After it's cooked slice it and fold up in a tortilla with guacamole, lettuce and salsa
Or try marinating chicken pieces (1 to 4 hours).
