Pollo Asado (Mexican Chicken Marinade)
  • Ingredients
  • 3/4 cup apple juice
  • 3 tablespoons fresh lime juice
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 serrano or jalapeno chili, minced
  • 1 /2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1 /2 teaspoon salt
  • 1 /2 teaspoon freshly ground pepper
Directions
  1. Place apple juice, lime juice, oil, garlic, chili, paprika, oregano, salt and pepper in medium bowl
  2. Whisk to combine well. Yield: 1 1/4 cups SUGGESTED USE: Use this marinade on boneless chicken (1 to 4 hours)
  3. After it's cooked slice it and fold up in a tortilla with guacamole, lettuce and salsa
  4. Or try marinating chicken pieces (1 to 4 hours).
