WHITE WINE SAUCE
  • Ingredients
  • 1/4 cup butter or margarine
  • 1 onion, finely chopped
  • 1 bay leaf
  • 3 parsley sprigs with stems
  • 1 cup mushrooms, thinly sliced
  • 1/3 cup flour
  • 1-1/4 cups dry white wine
  • 1 cup chicken broth
  • salt and freshly ground white or black pepper
  • 1-1/4 cups of cream
Directions
  1. Saute onion, bay leaf and parsley in butter stirring often until onion is softened but not brown
  2. Add mushrooms, then stir in flour
  3. Gradually stir in wine and chicken broth and bring to a boil
  4. Sauce will be very thick
  5. Cover pan and cook gently for about 15 minutes
  6. Add salt and pepper to taste and beat vigorously
  7. Remove bay leaf and parsley
  8. Stir in the cream and heat gently
  9. Do not boil.
