Lemon Pepper Marinade
Lemon Pepper Marinade
Ingredients
1/4 cup fresh lemon juice
1/2 teaspoon dried red pepper flakes
1/2 teaspoon coarsely ground black pepper
1 /2 teaspoon salt
1 tablespoon grated lemon rind (zest)
3 cloves garlic, minced
1/4 cup coarsely chopped fresh parsley
2 tablespoons coarsely chopped fresh oregano
2 tablespoons coarsely chopped fresh basil
1 /2 cup olive oil
Directions
Place lemon juice, red pepper flakes, pepper and salt in a medium bowl
Whisk until salt is dissolved
Add lemon zest, garlic, parsley, basil and oregano
Whisk in olive oil
Use within 1 hour. Yield: 1 cup SUGGESTED USE: This marinade works well on most anything
Try varying the fresh herbs for a different taste
It's great on all poultry (2 to 3 hours), pork tenderloin (3 to 4 hours) shrimp (3 to 4 hours) and especially fish fillets (1 hour).
