Lemon Pepper Marinade
  • Ingredients
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon dried red pepper flakes
  • 1/2 teaspoon coarsely ground black pepper
  • 1 /2 teaspoon salt
  • 1 tablespoon grated lemon rind (zest)
  • 3 cloves garlic, minced
  • 1/4 cup coarsely chopped fresh parsley
  • 2 tablespoons coarsely chopped fresh oregano
  • 2 tablespoons coarsely chopped fresh basil
  • 1 /2 cup olive oil
Directions
  1. Place lemon juice, red pepper flakes, pepper and salt in a medium bowl
  2. Whisk until salt is dissolved
  3. Add lemon zest, garlic, parsley, basil and oregano
  4. Whisk in olive oil
  5. Use within 1 hour. Yield: 1 cup SUGGESTED USE: This marinade works well on most anything
  6. Try varying the fresh herbs for a different taste
  7. It's great on all poultry (2 to 3 hours), pork tenderloin (3 to 4 hours) shrimp (3 to 4 hours) and especially fish fillets (1 hour).
