LINGUINE WITH WHITE CLAM SAUCE
  • Ingredients
  • 1 full load of pasta dough made into linguine
  • 2 cloves garlic, minced
  • 1/3 cup butter or margarine
  • 3 tablespoons all-purpose flour
  • 2-1/2 cups bottled clam juice
  • 1/4 cup fresh parsley, minced
  • 1-1/2 teaspoons dried thyme
  • salt and freshly ground black pepper to taste
  • 3 cups fresh minced clams OR
  • 4 (6-1/4 ounce) cans minced clams
Directions
  1. Make linguine and set aside
  2. In a large skillet, saute garlic in butter over medium-high heat for 1 minute
  3. Whisk in flour until smooth and add clam juice
  4. Whisk until mixed
  5. Add parsley, thyme, salt and pepper
  6. Reduce heat and simmer for 12 minutes or until sauce is reduced by 1/3
  7. The secret of this sauce is reducing the clam juice so the flavor is intensified
  8. Add clams and heat through
  9. Meanwhile, cook linguine until al dente, drain and place in a heated serving dish
  10. Pour sauce over linguine and toss gently Serve immediately.
