ANGEL HAIR PASTA WITH BASIL AND CRAB
  • Ingredients
  • 1 full load of pasta dough made into angel hair
  • 1/2 pound butter or margarine
  • 3 tablespoons chopped shallots
  • 2 tablespoons fresh basil, minced
  • 3 tablespoons fresh parsley, minced
  • 3 (16-ounce) cans peeled and chopped tomatoes, drained
  • 1/2 cup dry white wine
  • 1-1/2 pounds crabmeat OR imitation crabmeat
  • freshly grated Parmesan cheese
Directions
  1. Make angel hair and set aside
  2. In large skillet, melt butter and saute shallots, basil and parsley for 2-3 minutes
  3. Stir in tomatoes and heat to boiling
  4. Cook sauce until reduced by half
  5. Add wine and simmer 5 minutes
  6. Meanwhile, cook angel hair until al dente, drain and place in a heated serving dish
  7. Add crabmeat to sauce and simmer another 2-3 minutes
  8. Remove from heat
  9. Pour sauce over angel hair and toss gently
  10. Serve immediately
  11. Serve with Parmesan cheese.
