GARLIC/BASIL TAGLIATELLE WITH SHRIMP
  • Ingredients
  • 1 full load of garlic/basil pasta dough made into tagliatelle
  • 4 tablespoons butter or margarine
  • 1 pound large shrimp, peeled and de-veined
  • 8 Roma tomatoes, peeled and diced (about 2 1/2 cups)
  • 1/2pound mushrooms, sliced
  • 1/4 cup brandy
  • 2 tablespoons minced fresh basil or 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1-1/2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
Directions
  1. Make tagliatelle and set aside
  2. In large skillet, melt butter over medium-high heat and saute shrimp for 2-3 minutes or until shrimp are firm and opaque
  3. Remove shrimp; set aside
  4. Add tomatoes and mushrooms to skillet and saute for 5 minutes
  5. Stir in brandy, basil, salt and pepper
  6. Add cream and cook until sauce is reduced by 1/3, about 5-7 minutes
  7. Meanwhile, cook tagliatelle until al dente, drain and place in a heated serving dish
  8. Add Parmesan to sauce and stir
  9. Reduce heat to low and add shrimp to sauce
  10. Stir for 1-2 minutes to heat shrimp
  11. Remove from heat
  12. Pour sauce over tagliatelle and toss gently
  13. Serve immediately.
