FETTUCCINE WITH SCALLOPS, RED PEPPER, AND ANCHOVY SAUCE
  • Ingredients
  • 1 full load of pasta dough made into fettuccine
  • 6 tablespoons olive oil
  • 2 medium red bell peppers (about 12 ounces),seeded and cut into 1/4-inch strips
  • 2 garlic cloves, crushed
  • 4 anchovy fillets, finely chopped
  • 12 ounces bay scallops OR sea scallops, halved or quartered
  • 1/4 cup thinly sliced green onions, both white and green parts
Directions
  1. Make fettuccini and set aside
  2. Cut the red pepper strips about the same width as the fettuccini
  3. Heat oil in a medium skillet and add red peppers
  4. Saute over medium-high heat 5 minutes, or until peppers begin to blister and brown on the edges
  5. Stir in the garlic and anchovy fillets
  6. Saute 2 minutes, stirring, to dissolve the anchovies
  7. Add the scallops then saute over high heat until just cooked through about 3 minutes
  8. Adjust heat so that the other ingredients don't brown
  9. Meanwhile, cook fettuccini until al dente, drain and place in a heated serving dish
  10. Toss with the scallop mixture and sprinkle with sliced green onions before serving.
