SPAGHETTI WITH ANCHOVIES
  • Ingredients
  • 1 full load of pasta dough made into spaghetti
  • salt
  • olive oil
  • 1 garlic clove, sliced
  • 4 slices firm white bread, minced
  • 1 (2 ounce) can anchovies in oil, drained and mashed
  • 1 (13 ounce) jar pimento-stuffed olives, chopped
  • 1/4 cup parsley, chopped
  • 1/3 cup freshly grated Parmesan cheese
Directions
  1. Make spaghetti, cook al dente and drain
  2. Reserve 1/3 cup pasta cooking water
  3. Return spaghetti to pot to keep warm
  4. Meanwhile, in a 10-inch skillet over medium heat, add 1 tablespoon hot olive oil and cook garlic until golden
  5. Remove garlic with slotted spoon and set aside for garnish
  6. In hot oil remaining in skillet over medium heat, cook bread and 1/4 teaspoon salt until bread crumbs are lightly toasted, shaking skillet frequently
  7. To serve, toss spaghetti in a heated serving bowl with reserved pasta cooking water, anchovies, olives, parsley, and 2 tablespoons olive oil
  8. Sprinkle with toasted bread crumbs and Parmesan cheese.
