SPAGHETTI MILANESE
  • Ingredients
  • 1 full load of pasta dough made into spaghetti
  • 2 cups bread crumbs
  • olive oil
  • 1 medium head cauliflower
  • 3 to 4 cloves garlic, minced
  • 1 small can anchovies, cut in pieces
  • 1/4 teaspoon Cayenne pepper (optional)
  • 1/4 cup sugar (optional)
  • 2 cans Milanese paste
  • salt and freshly ground black pepper to taste
  • 1/3 cup olive oil
  • 3 (6-ounce) cans tomato paste
Directions
  1. Oil a heavy skillet
  2. Add bread crumbs
  3. Cook and stir constantly over medium heat until lightly browned
  4. Set aside to use for topping
  5. Break cauliflower in small florets
  6. Boil in salted water until partly cooked
  7. Drain
  8. Reserve water cauliflower was boiled in
  9. Set aside
  10. Meanwhile, make spaghetti, cook al dente, drain, and set aside to keep warm
  11. Saute garlic in 1/3 cup oil until light brown
  12. Add can of anchovies
  13. Stir until dissolved, about 3 minutes
  14. Add tomato paste and about 2- 1/2 quarts of water that cauliflower was boiled in
  15. Add salt, pepper and sugar (optional)
  16. Simmer over low heat for about 1-1/2 hours or until thickened
  17. Add cauliflower and Milanese paste
  18. Salt and pepper to taste
  19. Toss sauce with cooked spaghetti and serve with bread crumb topping instead of cheese.
