Citrus Marinade
Ingredients
2 cloves garlic, sliced
1/Bcup olive oil
3 tablespoons dark brown sugar
2 tablespoons balsamic vinegar
1-1/2 teaspoon Dijon mustard
1 /4 cup fresh lemon juice
1 /4 cup fresh orange or lime juice
1-1/2 teaspoons grated lemon rind (zest)
1/2 teaspoon salt
1 /4 teaspoon freshly ground pepper
Directions
Heat olive oil in a small saucepan over medium low heat
Add garlic and saute until it begins to turn golden
Remove pan from heat and remove garlic with a slotted spoon and discard garlic
Stir in remaining ingredients and let cool completely. Yield: 1 cup SUGGESTED USE: This marinade has a subtle flavor of garlic after the sauteing
Removing the garlic slices insures a sweet rather than bitter taste to the final result
Try this on shrimp (1 to 3 hours) or chicken pieces or boneless chicken breasts (2 to 3 hours).
