Citrus Marinade
  • Ingredients
  • 2 cloves garlic, sliced
  • 1/Bcup olive oil
  • 3 tablespoons dark brown sugar
  • 2 tablespoons balsamic vinegar
  • 1-1/2 teaspoon Dijon mustard
  • 1 /4 cup fresh lemon juice
  • 1 /4 cup fresh orange or lime juice
  • 1-1/2 teaspoons grated lemon rind (zest)
  • 1/2 teaspoon salt
  • 1 /4 teaspoon freshly ground pepper
Directions
  1. Heat olive oil in a small saucepan over medium low heat
  2. Add garlic and saute until it begins to turn golden
  3. Remove pan from heat and remove garlic with a slotted spoon and discard garlic
  4. Stir in remaining ingredients and let cool completely. Yield: 1 cup SUGGESTED USE: This marinade has a subtle flavor of garlic after the sauteing
  5. Removing the garlic slices insures a sweet rather than bitter taste to the final result
  6. Try this on shrimp (1 to 3 hours) or chicken pieces or boneless chicken breasts (2 to 3 hours).
