LINGUINE IMPERIAL
  • Ingredients
  • 1 full load of pasta dough made into linguine
  • 1/4 pound butter or margarine
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 cup minced fresh parsley
  • 2 tablespoons minced fresh basil or
  • 2 teaspoons dried basil
  • 1-1/2 cups fresh green beans, julienne sliced
  • 1-1/2 pounds fresh crabmeat OR
  • imitation crabmeat
  • 4 egg yolks, lightly beaten
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup heavy cream
  • 1/2 teaspoon salt
Directions
  1. Make linguine and set aside
  2. Prepare green beans and cook in a microwave or steam until they are just tender to the bite
  3. In a large skillet, heat together butter and oil
  4. Saute garlic, parsley and basil over low heat for 5 minutes
  5. Stir in crabmeat and cook for 2 minutes
  6. Remove from heat
  7. Meanwhile, cook linguine until al dente, drain, and transfer to a heated serving platter
  8. In small bowl, thoroughly combine egg yolks, Parmesan, cream and salt
  9. Toss warm linguine with egg mixture
  10. Add crabmeat mixture and toss gently until combined
  11. Serve immediately.
