HERBED CHICKEN DINNER
  • Ingredients
  • 1 full load of pasta dough made into spaghetti,
  • fusilli or linguine
  • 1/4 cup olive or vegetable oil
  • juice of 1 lemon (about 2-1/2 tablespoons)
  • 1 (2-1/2-pound) broiler fryer chicken
  • 6 tablespoons butter or margarine, melted
  • 3/4 cup firmly packed fresh parsley leaves
  • 1 small garlic clove, cut in half
  • 1/2 teaspoon salt
  • 1 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • freshly ground black pepper to taste
Directions
  1. Make your choice of pasta and set aside
  2. In a small bowl, beat 1/4 cup oil and lemon juice with a fork
  3. Pour over chicken pieces
  4. Toss to coat evenly
  5. Refrigerate for 1 hour
  6. In a blender or food processor, combine butter, parsley leaves, garlic, 1/2 teaspoon salt, oregano, basil, thyme and pepper
  7. Cover and blend at high speed a few seconds until parsley is minced
  8. Set aside
  9. Broil chicken pieces, skin-side up, about 8-inches from heat for 20 minutes or until golden brown
  10. Turn and broil 20 minutes longer, until golden brown
  11. During last 4 minutes of broiling, brush both sides of chicken pieces with 1/4 cup herb mixture
  12. Cook pasta until al dente, drain, and remove to a heated serving platter
  13. Toss with remaining herb mixture
  14. Arrange chicken pieces at edges of casserole
  15. Serve immediately
