CHICKEN IN-A-POT
  • Ingredients
  • 1 full load of pasta dough made into
  • small macaroni
  • 1 (2-1/2 pound) broiler-fryer chicken,
  • cut in pieces
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • freshly ground black pepper to taste
  • 1 teaspoon dried tarragon
  • 2 tablespoons butter or margarine
  • 2 tablespoons olive or vegetable oil
  • 2 cups peeled diced tomatoes
  • 2 medium onions, sliced, separated in rings
  • 1 green pepper, cut in strips
  • 1-1/2 cups chicken broth
  • 1/2 cup white wine OR
  • additional chicken broth
  • 1/4 cup tomato paste
Directions
  1. Make macaroni and set aside
  2. Sprinkle chicken with lemon juice, salt, pepper and tarragon. Brown chicken in skillet with butter and oil
  3. Add tomatoes, onion rings, green pepper strips, 1/2 cup chicken broth, wine and tomato paste
  4. Cover and bring to a boil over high heat
  5. Reduce heat and simmer about 45 minutes until chicken is ten- der
  6. Remove chicken and keep warm
  7. Add remaining 1 cup broth to the vegetables and bring to a boil
  8. Add in macaroni and continue to cook, stirring occasionally, until macaroni is cooked al dente
  9. Place chicken in center of a warm platter. Arrange macaroni around chicken
  10. Serve immedi- ately.
