PROSCIUTTO DELIGHT
  • Ingredients
  • 1 full load of pasta dough made into penne
  • 1/4 cup unsalted butter
  • 1/4 cup minced green onions
  • 1/4 pound mushrooms, sliced
  • 1/2 pound prosciutto, cut into 1/4-inch julienne strips
  • 1-1/2 cups heavy cream
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 cup freshly grated Parmesan cheese
Directions
  1. penne and set aside
  2. In large skillet, melt butter and saute onions, mushrooms and prosciutto for 3-5 minutes
  3. Stir in cream and pepper
  4. Heat to boiling then lower heat and simmer for 6-8 minutes or until sauce thickens slightly
  5. Remove from heat
  6. Meanwhile, cook penne until al dente, drain and transfer to a heated serving dish
  7. Toss warm pasta with Parmesan
  8. Pour prosciutto mixture over pasta and toss until evenly mixed
  9. Serve immediately, sprinkled with additional Parmesan.
